Stove Top Sausage Tortellini Soup
Ingredients:
- 1 Tbso EVOO
- 1 lb Italian sausage
- 32 oz chicken broth
- 28 oz diced tomatoes
- 30 oz tomato soup
- 1 tsp salt
- 1 tsp pepper
- 1 tsp oregano
- 1 tsp basil
- 1/2 Tbsp Italian seasoning
- 8 oz cream cheese, softened
- 12 oz package cheese tortellini
- 3 cups fresh spinach
Directions:
- In a large stockpot, brown sausage, crumble while cooking.
- Add a spray on chicken broth to the bottom of the pot to remove bits of sausage from the bottom.
- Add onion, cook until translucent about 2 to 3 minutes.
- Add garlic, cook for 30 seconds.
- Add broth, tomatoes, tomato soup, and seasoning. Bring to a boil.
- Reduce to a simmer and add cream cheese. Stir to help melt
- Add tortellini and spinach. Continue simmers for 10-15 minutes.
- Remove from heat to slightly cool.
- Serve
- Enjoy
