Berry Trifle

This Berry Trifle is my go to for summer holidays. It is light, easy, and delicious. It is always a hit with our families. It is perfect for summer, holidays, and when wanting to eat healthy. 


Berry Trifle

Ingredients:
Angel food cake cut into pieces
1 cup chopped strawberries
1 cup chopped blueberries
12 oz homemade whipped cream (you can also use store bought)

Directions:
1- Layer bottom of dish with 1/2 of the angel food cake. 
2- Top with 1/2 of the berries
3- Top with 1/2 the whipped cream
4- repeat with rest of angel food cake, and berries.
5- Finish off with remaining whip cream.
6- Refrigerate for 3-4 hours, until ready to serve.
7- Serve.
8- Enjoy!!!

**You can also use store bought whipped cream
***You can also use any fresh fruit
*** I use a Rubbermaid bowl as the dish, you can also use a cake dish.

Can you believe that May is coming to an end. We had such a fun filled month. I can't wait until our summer break officially starts next week. Ella and I have started working on our Summer Bucket List, I just can't wait.

I ordered this hour countdown water bottle from Jane.com (sorry it is no longer available). It has helped so much with hitting my water goal every day.

I recently started using oils around the house. We are working towards being more natural, less harmful products... I started putting a few drops of lavender in with my bath to help with relaxation. I have noticed a huge difference with the way I sleep at night.

Memorial Day Weekend Wrap

Happy Tuesday. Time to get back to reality. Ella still has 7 days of school left. Even though Ella was with her father all weekend I still had a wonderful weekend. Lets take a look back.


Friday Ella and I had our first real “that doesn't match” morning. Ella asked me to help find her something to wear because it was going to be nice and she had gym. Everything I picked out for Ella to wear she said didn't match. I finally gave up trying to help her and let her pick out her outfit herself. This is her matching. Pink striped dress and zebra striped shorts. Oh the joys of parenting. She was happy and that's all that matters.


We had lots of fun playing with blocks and building on Friday while Ella was in school.


Austin and I ended up going outside after lunch. He figured out how to turn the hose nozzle on himself. It is going to be a long summer. 

Friday evening Brian and I thoroughly cleaned the house, especially the kitchen. We had been having an issue with black ants for a few weeks, but thought there we associated with all the yard work we were doing outside. We found some open candy in the cupboard with a lot of little not so friends helping themselves. We got rid of all the candy, wipes down everything and sprayed outside and inside. We have only found 2 random ants since. 


Saturday morning we stopped by Erie Shores Coffee Company and grabbed coffee, bagels with cream cheese and a muffin for Austin to go. We went to a local park and had our breakfast sitting at a bench watching some ducts. When Austin finished eating he decided to go for a walk with the duck in the water.


We saw lots of geese with their babies. What comes with ducks and geese,...lots of poop also. Not so fun walking and trying not to step on land mines everywhere. 


Austin enjoyed walking around the circle and running free.


After doing some shopping at one of the local farmers markets and Trader Joe's, Brian and Austin came home and cleaned out my car. Well Brian cleaned and vacuumed. Austin drove, learned how to turn on the radio, messed with my blue tooth, and opened and closed the trunk. 


I had a relaxing day and ended it with playing Pirate with Austin before bed. Brian went to a friends house to help install a patio. I also watched some of my DVR, I went a little crazy with recording movies and still have only watched half the Royal Wedding.


Sunday was a gorgeous day. I enjoyed started a new summer read.


Brian and Austin walked my car, and Austin rinsed off the van and himself.


You can take the mom out of the hair salon but can't take the cosmetologist out of me. Austin and Brian got short summer haircuts. 


My in-laws hosted their annual Memorial Day cook out. We tried to amuse Austin instead of chasing him all over the place by bringing his favorite car track outside. He enjoyed playing with it on and off the whole time.


This is my new favorite summer beer. Very light and refreshing. It is pretty sweet and orange tasting. Have you tried Bud Light Orange? 


The guys planned corn hole and can jam most of the cookout, when were were BBQing the ribs. 


Monday was our official rest day. Brian had a showing in the morning. Austin and I layed in bed relaxing. I ended up taking a nap while he played on his sisters phone. 


I surprised Austin by putting up a little pool. He enjoyed playing in it, and draining the water out of it and turning it into a slip and slide. We need to work on keeping his pants up. I ended up putting him in a smaller pair of swim trunks. 

Overall we had a fun filled, relaxing holiday weekend. We missed Ella but enjoyed our time with just Austin.

Friday Favorites

Happy Friday. We have had a fun week and more fun planned for this weekend. Only 8 more days of school left until SUMMMMERRRR!!!! I don't know who is more excited Ella or me. (ask me again in a month and I may have changed my mind.)

~ ONE ~


Austin has a new favorite toy. He stole (a very nice Girl Scout cookie lady let him have) this dinosaur. Mr. Dino gets fed cars regularly, get rode like a pony, and does a lot of "RAWR"ing. 

~ TWO ~


This past week Brian has been working a lot of later nights. Our normal bedtime routine doesn't work very well when the bed isn't big enough for all 3 of us. But we seemed to manage, with staying up a little later, being squished, and lots of love.

~ THREE ~


They told me it isn't going to rain, even though it was sprinkling when we left. Ella insisted on walking to school. We grabbed their new umbrella's they got from the Easter Bunny and headed off to school. It rained more than just a sprinkle but both kids were content with their umbrella's. (me on the other hand got wet)

~ FOUR ~

The first day of really nice weather calls for some fun in the sprinkler. Last year Austin wanted nothing to do with this sprinkler, he was afraid of it. This year he loved it. When I turned off the water I got the death stare. 

~ FIVE ~


Field day was at school yesterday. There were 8 different stations set up. All the kids had so much fun. I volunteered at the tug a war station. Here is Ella at the sack race. (that you to a wonderful mother/friend for sending me the picture)

~ SIX ~


We had our last Girl Scout meeting for the year this week. Year 1 of Daisies is done. There were a few hiccups along the way but overall a lot of fun. Can't wait until next year.

How To Clean Your Produce

The most asked question I get over on instagram is how I clean my produce. Every time I come home with fresh produce I wash it before I even put it in the fridge. Between germs, dirt, pesticides, bugs, etc you never know what is on the food. Even just because something is labeled organic doesn't mean something didn't get on it in the store, during processing, or during shipment. I would rather be safe than sorry. Any produce, fruits and veggies, that we eat the outside gets washed. (lemons get washed before a slice goes in my water peel and all) After I clean the produce I also prep it for the week ahead. This makes for easier grab and go snacks, dinner making quicker, less waste and less excuses. Plus it only takes me like 10 additional minutes. BONUS: my produce actually last longer.


How to Clean Your Produce

Ingredients:
1/2 cup apple cider vinegar
2 drops of thieves essential oil
water

Directions:
1- Fill cleaned kitchen sink half way with cold to luke warm water. Add 1/2 cup of Apple Cider Vinegar and 2 drops of thieves essential oil.
2- Add produce. Let sit for 2-3 minutes. Stir produce so all sides get washed. Let sit for another 2-3 minutes. (feel free to let it sit longer)
3- Drain sink. Rinse produce for a good 30 seconds with cold water.
4- Dry produce thoroughly with a kitchen towel. 
5- Store in an air tight container (not the package it came in) or the drawer in the fridge or a bowl on the container depending on what the produce is.

Beach Club Resort

When we were planning our adult only vacation we had different needs for a hotel. We knew we wanted a resort that wasn't geared so much towards kids (yes even at Disney this is possible). It didn't have to be easy to access to Magic Kingdom. We knew that our trip was going to be short, lots of park hopping, and spending time at the Flower and Garden Festival. One huge benefit of not having kids with us is we didn't have to worry about strollers or too much walking. Brian and I don't go on vacation to Disney World to sit and be lazy, or complain about "too far of a walk". It is Disney World on average we knew we were going to walk at least 20,000 steps a day (we ended up walking over 32,000 steps a day.) Brian ended up finding an awesome deal and we stayed at the Beach Club Resort.



We arrived at the hotel and got in line to see if our room was ready. Check-in isn't until 3pm. If our room wasn't ready we planned on dropping off all our luggage with Bell Services and finding something to eat. While we were standing in line Brian got a text saying our room was ready. We got out of line and ventures around the hotel to find our room. I am horrible at directions at hotels and parks (but I am great at driving directions shockingly.) 


We arrived to a basic room. It was bright colored, clean, and welcoming. Our room had two queen beds, a small desk with chair, and dresser with tv in the main area.



The bathroom had a separate double sink from the toilet and shower. I have been spoiled with a double sink every time we have went to Disney World (not all rooms have double sinks) that I need one for home now too.


Our room also had a little coffee area and a small fridge. We never used any of it.


My favorite part of our room was our balcony that had two chairs and a little table. Our view was nothing special but better than a parking lot. The balcony in our room was larger than the other ones we could see, this would have been great to work out on the balcony while the family slept if I was here a whole week. This trip quick there was no extra workouts all the walking was enough.

My biggest complaint about the Beach Club Resort was the noise you heard outside our room. Housekeeping kept their carts outside the balcony. We heard a lot of people walking down the halls, etc. Since it was just Brian and I we were out late and up early so it didn't bother us to much, but the random time we stopped back during the day we heard the noise.



At the bus stop there is a screen that shows the wait til and what options of transportation is available to get to each park. This was our first time experiencing this at Disney World. It was a great amenity to have and was very accurate. Since it was just Brian and I we had no problems getting on the next bus available, but did end up standing most of the time. 


The resort has a few quiet pools and the main larger pool. We enjoyed the large pool once during our stay, just to try it out. There is a lazy river, a pirate ship themed slide, hot tubs, and a pool with sand on the bottom. Brian did the water slide and said it was fun. I enjoyed the very lazy river, there was only one jet to push you around. I was surprised that depth of the lazy river was so random and varied between 4 feet and 8 feet. 


All the kids at the resort seemed to enjoy the "beach" pool with the sand. As a native to Northern Ohio we have Lake Erie where we visit at least once a year. The sand at the Beach Club resort didn't feel like real sand. It felt like little pebbles under your feet. 

Beach Club Resort has three quick service restaurants, two table service restaurants and one lounge. I hate to admit we didn't try any of them. We ended up eating at the parts, especially the Flower and Garden Festival. 

Since we skipped the front desk we didn't have a lot of interaction with the hotel staff. We did see housekeeping walking the halls and they would say "Hello" or "Good Morning". (but it was nothing like the "Ahola" you get staying at the Polynesian.) We saw security once (like 5 guys at once) they were also nice. The concierge was awesome, Bell Services was also great. 

Overall, we did enjoy the resort. The best perk was the walking distance to Epcot, Hollywood Studios, and the Boardwalk. I don't think it screamed "Disney". Would we stay there again, yes but it wouldn't be my first choice.
