Creamy Shrimp Scampi Spaghetti Squash
Ingredients:
- 1 medium spaghetti squash
- 1 lb large shrimp, peeled and deveined
- salt/pepper
- 2 Tbsp unsalted butter
- 3 Tbsp minced garlic
- 1 large handful spinach
- 1 lemon
- 1/2 cup heavy cream
- 1/2 cup shredded parmesan cheese
Directions:
- Cook spaghetti squash. You can bake it (directions here) or use the instant pot which is my preferred method (directions here)
- Let squash rest until cool to handle.
- In a large skillet, melt butter over meidum heat.
- Add shrimp. Season with salt and pepper. Cook until pink.
- Add garlic. Cook for 1 minute.
- Add spinach and stir until softened.
- Slowly add heavy cream. Followed by parmesan cheese. Stirring frequently until thickened.
- Squeeze lemon juice into sauce and stir.
- Use a fork to scrape squash into long strands.
- Serve shrimp sauce over squash.
