Ingredients:
- 1 lb ground Italian chicken/turkey meatballs
- 3 Tbsp EVOO
- 1/2 medium onion, diced
- 1 green pepper, diced
- 2 Tbsp minced garlic
- 2 cans Great Northern Beans
- 3 cups spinach or spinach/ kale mix
- 4 cups Fire and Kettle Chicken Bone Broth
- 1 Tbsp Italian seasoning
- salt/pepper
Directions:
- In a large pot, heat EVOO. Add onion, pepper, and garlic. Cook until veggies become soft.
- Rinse beans, then add to pot.
- Add bone broth, meatballs, spinach, and seasonings.
- Bring to a boil for 10 minutes.
- Simmer for an additional 20 minutes, optional to enhance flavor.
- Serve
