Meal Planning Sunday Week 35

 Hey loves. Happy Sunday. Hope you are having a wonderful weekend. Mine is not turning out as planned. I am feeling under the weather so plans changed and Brian did the grocery shopping. I am drinking lots of fluids and getting rest. We have a busy week ahead. Here's our menu for the week.

 


Friday Favorites

 Hey loves. Happy Friday. I hope you had a great week. We had a pretty good week. Wednesday night to Thursday was our only real bad night and day with Audrianna. I think she is cutting another tooth. My post from Thursday - Monthly Wellness didn't get posted until late in the day. It is a new monthly link up. Be sure to check it out.

 I am excited for this weekend. We have a surprise play date for the kids and we are suppose to get a bunch of snow on Sunday. (mental note I need to figure our groceries before the snow). I can't believe that it is February next week already.

Apple Banana Muffins



 Apple Banana Muffins

Ingredients:

  • 1 eggs
  • 2 medium bananas
  • 1 Tbsp butter, melted
  • 1 cup flour
  • 1/2 cup flaxseed, milled
  • 3/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup apple sauce 

Directions:

  1. Preheat oven to 350 degrees. Spray muffin tin with EVOO.
  2. Combine eggs, banana, and butter in a medium bowl. 
  3. Slow add in flour, flaxseed, baking soda, and salt. Mix well.
  4. Mix in apple sauce.
  5. Divide batter into muffin tins, 3/4 full.
  6. Bake for 18-22 minutes. Toothpick inserted in center of muffin should come out clean.
  7. Remove from oven, let cool.
  8. Serve
  9. Enjoy!!

Whats Up Wednesday

Hey loves. Happy Wednesday. We are halfway through the week and it is coming to the end of the month. January was a good month. We are getting into the routine of hybrid learning again, we are on week two. Audrianna is sleeping through the night, we are on night 4. The month is ending stronger than it started. It's that time for Whats Up Wednesday. On the last Wednesday of every month Shay, and Sheaffer invite everyone to join in

Valentine Touches

 I finally pulled out some of our Valentine's Day decorations. This year we decided we were not going to go all crazy with decorations. I am loving a more simple house scattered with toys. Just some pops of color, and the kids can't say "But mom you didn't decorate for Valentine's Day". "Why yes I did see that heart over there". I also have not bought anything new this year so everything I have is a from last year or older.

5 Questions Part 4

Happy Monday. How was your weekend? I had a nice relaxing weekend with catching up on some things around the house, looking back at the week, and preparing for the week ahead. 

I am not one to talk politics but this past week has really been such a historic week for women and girls everywhere. No matter your political views, we can all agree seeing a female Vice President is so motivating and inspiring. Thinking of all the girls who have dreamed of being President, your dreams could really come true one day.

If you follow me on Instagram you may have noticed I haven't been posting or storying as much. This was not intentional. Audrianna has started with her terrible 2's, 6 months early. From lack of sleep to getting into everything. We spent a lot more time on the floor playing together, cuddling, and chasing her around the house. We are all still adjusting to the new hybrid schedule, being in the car more, and Brian working weird longer hours. 

Last week I posted on Instastories a question box for random questions for today's post. I got a bunch. I answered a few in stories and I have answered 5 below. On my instagram stories today I am also doing a DAY IN THE LIFE. it has been forever since I did one. I have gotten a few requests for an updated on.

 Hey loves. Happy Sunday. I have been a relaxing and productive weekend. Can that really be a thing? And with two crazy kids running around and Brian working all weekend. Shockingly it has been true for me this weekend. I have actually got more done this weekend than I did all week.

From sleepless nights because of Audrianna, to the end of the school quarter with Ella, and having a long 4 day weekend last week completely throwing off our schedules. I am ready for the weekend. No big plans, relaxing, reading, and preparing for the week ahead. Right now I am linking up with Erika and Andrea sharing some of my recent favorites. This week has been all about Audrianna. She is getting such a personality and also very demanding with my time.

Baked Caprese Chicken

 

Baked Caprese Chicken

Ingredients:
  • 4 boneless skinless chicken breast
  • 2 Tbsp EVOO
  • salt/pepper 
  • 3 tsp garlic powder
  • 3 tsp onion powder
  • 4 slices fresh mozzarella cheese
  • tomato sliced
  • balsamic glaze

Directions:
  1. Preheat oven to 400 degrees. Lightly grease a baking sheet with EVOO
  2. Place chicken onto baking sheet. Brush with EVOO and season.
  3. Bake for 25 minutes or until chicken is 165degrees.
  4. Remove from oven and top chicken with mozzarella cheese, and tomato. Place back in over for about 5 minutes until cheese melts.
  5. Remove from oven and garnish with balsamic glaze.
  6. Serve
  7. Enjoy!!!

Ingredients:
  • 15oz can pumpkin puree
  • 3/4 cup canned coconut milk
  • 1/2 cup vegetable broth
  • 2 Tbsp pure maple syrup
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1 tsp pumpkin spice seasoning

Directions:
  1. In a blender add: pumpkin, coconut milk, vegetable broth, maple syrup, and spices. Blend until smooth
  2. Pour mixture into medium saucepan. Bring to a simmer over medium heat. 
  3. Cook until soup is warmed.
  4. Serve
  5. Enjoy!!!

Weekends can be hard

Hey loves. Happy Monday. I am happy today the kids don't have school, this weekend was hard. Our schedule was out of whack, things didn't go as planned. Monday has caught up with us to quickly and we are not fully prepared for the week ahead. It is already going on 10am on Monday as I am just writing this post. Normally my post would have been completed the night before or first thing in the morning, like 5am. Today that didn't happen .

Meal Planning Sunday Week 33

 Hey loves. Happy Sunday. It is a cold snowy day busy day here in northern Ohio. We had our first Girl Scouts meeting of the year this morning, followed by another big Cleveland Browns football game. If you are not a football follower this is a HUGE deal that the browns have made it this far. I think Brian said the last time they did this was more than 50 years ago. My meal planning and grocery shopping got done yesterday. Today is about family time. As the kids play and I make dinner here is our meal plan for the week.

Hey loves. Happy Friday. I am excited for a date night tonight. Ella and Austin are having sleepovers with family tonight. Audrianna is just going to my parents for a few hours. One of my intentions for 2021 is to get back into monthly date nights, even if that means date nights at home. Our relationship is also important especially with three wild children who take up a lot of our time. But I wouldn't change that for he world.

Audrianna 18 months

 


How is this crazy little girl already 18 months. Audrianna turned 18 months on the 11th, but had her doctors appointment yesterday. She is cute, a mommy's girl, but also a wild one and keeps me on my toes. You would think being my third child she would be the easiest and I would be a pro. Gosh each kid is so different and gives you a run for your money in different way.

Early morning

 I am up. It is 430 in the morning. I am determined to get back into the routine of waking up before the house, and getting some time for me alone. Connecting into my devotionals, getting an un uninterrupted workout done, enjoy the quiet, check on my blog, word on my coaching business and tie up other lose ends. It sounds like a lot. It may sound crazy to wake up so early. But I feel so much more accomplished and energized when I do. My mommy brain needs them time for me. 

Our days have gotten busier. Ella is back in school 2 days a week. On those two days I am in the car 3-5 times a day depending if Ella goes to her dads and if she has reading at the library. I listen to podcasts instead of music most of the time, or talk with my kids. This also helps me mentally. 

Yesterday was the evening that Brian had been home uninterrupted in over a week. From working to football his schedule has been busy. It was a nice change for him being home helping with the kids and stuff around the house.

Not Just A Mom- Getting Cozy

Hey loves. Happy Monday. We had a great weekend. I got a lot of stuff done around the house that I needed to catch up on. I am ready for the week ahead. Ella goes back to school hybrid, so two days at school and 3 days at home learning self paced. She learns so much better this way, well she learns better in school but being self paced and not rushing to get assignments done in a time frame at home is hard on her. With her back hybrid it makes my days so much busier and in the car a lot more. Today I have to pick her up from her dads, drive her to school, pick Austin up from school, and pick Ella up from school. Time for a busy week.
But first today is the second Monday of the month, I know right, time for Not Just a Mom link up. 


Buckeyes

 I have lived in Ohio my whole life and this is my first time ever making Buckeyes. Some people call them peanut butter calls. There are more names. 


Buckeyes

Ingredients:
  • 1 cup peanut butter
  • 5 Tbsp unsalted butter
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 2 cups semi sweet chocolate
  • 2 Tbsp coconut oil

Directions:
  1. In a mixer, blend peanut butter, butter and vanilla.
  2. Add powdered sugar and mix on low until combined. Scrape down bowl and mix again.
  3. Pinch off tablespoon sized pieces and roll into balls.
  4. Transfer balls to a baking sheet and chill for 30 minutes
  5. Add chocolate and coconut oil to a medium bowl and melt on 50% power in the microwave. Stir to combine and set aside to cool to room temperature.
  6. Using toothpick dip the peanut butter balls into the chocolate. Leave a bit of the peanut butter exposed for that signature buckeye look.
  7. Chill to allow the chocolate to firm up.
  8. Serve
  9. Enjoy!!

Meal Planning Sunday Week 32

Hey loves happy Sunday. Last weeks meal plan went over very well. I stuck with my nutrition goals and using my containers. Brian said numerous times "this is really good" as I was switching up and trying new recipes. This week will be some new recipes again. 

January Intentions

Where is this month going? I can't believe it is already the 7th of January. I started this blog post on the 1st with coming up with intentions for the month, some things have already been checked off. Besides my January monthly Intentions, I am also taking a look back at December Intentions, 2021 Goals, and Daily Habits.

 I have done my fair share of making white break with my parents bread maker that I borrowed, maybe one day they will get it back. I have had some major fails and I have wanted to throw the bread maker out the window. It has taken some adjusting but I have perfected white bread in the express setting in our bread maker.

What a crazy holiday season it has been. I know I am not alone saying that I had delayed packages shipped from USPS. I actually just got a package on Saturday (1/2) that was suppose to arrive on December 7th. Amazon did let us do a refund and reorder so Austin still got his present for Christmas.

Happy New Year. Hope you and your loved ones had a wonderful, safe, and healthy holiday season. We had a relaxing low key holiday. Now I am ready to get back into a schedule, new routine, and working towards my goals for the year. Tomorrow I am starting the Ultimate Portion Fix, using color coded containers. Lets look at our dinner menu for the week.

2020 brought so many struggles, challenges, adventures that we would have never imagine, cancelled plans, friends and family pushed apart, but also lot of learning, loving, time together with just us, and memories. There were lots of tears, worry, love, and prayers.
