Instant Pot Chicken Stir Fry

I hate to admit I got my instant pot for Mother's day and I really only use it to make the best corn on the cob. One of my goals since we are back in school and getting back into a routine is to try a new recipe each week using my Instant Pot. If it turns out a success I will be sharing. 



Instant Pot Chicken Stir Fry

Ingredients:
3 chicken breast diced
1/2 onion diced
Veggies of your choice (I used sweet peppers, broccoli, and Brussels Sprouts)
1 tbsp EVOO
1/2 cup coconut amminos 
1/4 cup honey
1 tsp minced garlic
salt/pepper to taste


Directions:
1- Preheat Instant Pot using the saute setting. Once the pot reads HOT add in oil to the bottom of the pot. 
2- Add chicken. Saute until chicken is thoroughly cooked. 
3- Add veggies.
4- Add coconut amminos, honey, garlic and salt/pepper. Stir. 
5- Place the lid on the top. Change program to Steam for 2 minutes. 
6- Once done release steam.
7- Serve.
8- Enjoy!!!
