Nectarine Scuffin
(yes it is a mix between a scone and a muffin)
Ingredients:
- 1/2 cup unsalted butter
- 2 cups all purpose flour
- 1/2 tsp baking soda
- 1 tsp baking powder
- 3/4 tsp cinnamon
- 1/2 tsp fine salt
- 1/2 cup Greek yogurt
- 1 egg
- 1/3 cup honey
- 1 tsp vanilla extract
- 1/2 tsp almond extract
- 1 cup fresh, peeled, chopped nectarines(about 2 nectarines )
- FOR GLAZE TOPPING:
- 3/4 cup powdered sugar
- 1 TBSP milk
Directions:
- Cut butter, place in glass bowl and microwave to melt. Set aside to cool
- Preheat oven to 400 degrees.
- In a large bowl whisk together flour, baking soda, baking powder, cinnamon, and salt.
- In a medium bowl combine melted butter, egg, yogurt, honey, vanilla extract, and almond extract. Mix until smooth
- Add wet mixture into dry mixure. DO NOT overmix.
- Fold in nectarines until evenly distributed.
- Spoon 12 dough balls onto baking sheet.
- Bake for 15 minutes
- Cool completely before glazing.
- Glaze: Mix powdered sugar and milk in a small bowl until smooth.
- Spoon glaze over Scuffin.
- Serve
