Nectarine Scuffin

Nectarine Scuffin 
(yes it is a mix between a scone and a muffin)

  • 1/2 cup unsalted butter
  • 2 cups all purpose flour
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 3/4 tsp cinnamon
  • 1/2 tsp fine salt
  • 1/2 cup Greek yogurt
  • 1 egg
  • 1/3 cup honey
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1 cup fresh, peeled, chopped nectarines(about 2 nectarines )
  • 3/4 cup powdered sugar
  • 1 TBSP milk

  1. Cut butter, place in glass bowl and microwave to melt. Set aside to cool
  2. Preheat oven to 400 degrees.
  3. In a large bowl whisk together flour, baking soda, baking powder, cinnamon, and salt.
  4. In a medium bowl combine melted butter, egg, yogurt, honey, vanilla extract, and almond extract. Mix until smooth
  5. Add wet mixture into dry mixure. DO NOT overmix.
  6. Fold in nectarines until evenly distributed. 
  7. Spoon 12 dough balls onto baking sheet.
  8. Bake for 15 minutes
  9. Cool completely before glazing.
  10. Glaze: Mix powdered sugar and milk in a small bowl until smooth.
  11. Spoon glaze over Scuffin.
  12. Serve
