One Pot Cheeseburger Casserole

  • 1 block sharp cheddar cheese shredded
  • 1 pound ground turkey
  • salt/pepper to taste
  • 1 small onion diced
  • 1 TBSP minced garlic
  • 1 TBSP Worcestershire Sauce
  • 2 TBSP tomato paste
  • 3 TBSP ketchup
  • 4 cups beef broth (or chicken)
  • 16 oz. elbow macaroni
  • 3/4 cup Greek Yogurt
  • 1/2 cup Almond milk

  1. Shred the cheese and set aside. You want the cheese, yogurt, and milk to become room temperature. 
  2. In a large pan brown ground turkey, add salt and pepper to taste.
  3. Add in minced garlic and onion cook an additional minute
  4. Add Worcestershire sauce, tomato paste, and ketchup. Stir until well combines
  5. Add broth and macaroni. Stir. Bring to a gentle boil. Turn down to simmer.
  6. Cover the pot. Cook for 4 minutes. Remove lid. Stir. Cover again and cook for an additional 4 minutes. 
  7. Stir in yogurt and milk.
  8. Gradually add cheese. Stirring constantly.
  9. Replace lid and cook for 2-3 minutes until all the cheese is melted. 
  10. Serve. 
  11. Enjoy
