Crock Pot Mongolian Chicken Thighs

  • 6 boneless skinless chicken thighs
  • 1/2 onion diced
  • 1/4 cup light soy sauce
  • 1/2 cup brown sugar
  • 1/2 tsp ground ginger
  • 2 TBSP minced garlic
  • salt and pepper to taste

  1. Add chicken thighs and onion to crock pot. 
  2. Add remaining ingredients
  3. Place lid on crock pot. Cook on low for 6-8 hours.
  4. Remove from chicken from crock pot and place in bowl of stand mixer. Shred chicken. (this is optional you can also serve chicken whole instead of shredding)
  5. Serve as desired. We had over rice with steamed veggies. We also spooned leftover sauce to rice for flavor.
  6. Enjoy!!
