I got this idea from Lauren over at Don't Mind the Mess. She shared her version of this recipe at the same time I had so much pesto we were eating Caprese Chicken every night. This was a great switch up.
Shrimp Pesto over Zoodles
Ingredients:
- 15-20 medium shrimp
- garlic powder
- onion powder
- salt/pepper
- oregano
- diced fresh tomatos
- pesto (recipe here)
- 2 large zuccinhi's spiraled
Directions:
- In a large skillet cook shrimp seasoning with garlic powder, onion powder, salt, pepper, and oregano. over medium heat
- Add diced tomato. Cook until softened.
- Lower heat, add zoodles and pesto. Cook for 1-2 mediums. (cook longer if you like your noodles softer)
- Serve
- Enjoy
