Shrimp Pesto with Zoodles

I got this idea from Lauren over at Don't Mind the Mess. She shared her version of this recipe at the same time I had so much pesto we were eating Caprese Chicken every night. This was a great switch up.


Shrimp Pesto over Zoodles


Ingredients:

  • 15-20 medium shrimp
  • garlic powder
  • onion powder
  • salt/pepper
  • oregano
  • diced fresh tomatos
  • pesto (recipe here)
  • 2 large zuccinhi's spiraled


Directions:

  1. In a large skillet cook shrimp seasoning with garlic powder, onion powder, salt, pepper, and oregano. over medium heat
  2. Add diced tomato. Cook until softened.
  3. Lower heat, add zoodles and pesto. Cook for 1-2 mediums. (cook longer if you like your noodles softer) 
  4. Serve
  5. Enjoy
