Mom's Broccoli Casserole

This side dish just screams holiday's to me. Every year my mom makes broccoli casserole for either Thanksgiving or Christmas. One year my cousin offered to make it and it didn't turn out right, it was to watery. My mom went back to making it every year since. This past year was the first time I actually made it, used my mom's recipe and it was so good. Just the smell of it brings back so many memories. This is by no ways healthy but so delicious



Mom's Broccoli Casserole


Ingredients:
  • 1 large head broccoli, cooked and chopped into bite size pieces
  • 1 can cream of mushroom soup
  • 1/2 cup mayo
  • 1 cup cheddar cheese, shredded
  • 1 Tbsp minced onion
  • small can of mushrooms
Topping
  • 1 sleeve of Ritz crackers, crumbled
  • 1/4 cup butter, melted

Directions:
  1. Preheat oven 350 degrees
  2. Spray 2 quart casserole dish and set aside.
  3. Mix all ingredients in casserole dish minus toppings. 
  4. Sprinkle cracker crumbs over casserole. 
  5. Slowly pour melted butter over crackers
  6. Bake for 40 minutes
  7. Serve
  8. Enjoy
