Blueberry Lemon Muffins


  • 2 cups flour
  • 1 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 2 eggs
  • 1/2 cup melted butter
  • lemon zest
  • lemon juice
  • 1 cup blueberries


  1. Preheat oven to 350 degrees. Line muffin tins with cup cake liners or spray lightly with EVOO.
  2. In a medium sized bowl mix flour, sugar, baking powder and salt.
  3. Add milk and eggs one at a time. Blend.
  4. Add melted butter, lemon zest, juice and blend.
  5. Fold in blueberries.
  6. Pour batter into muffin tins using a ice cream scoop
  7. Bake 30 minutes.
  8. Let cool.
  9. Serve
  10. Enjoy!!!
