Granola Bars
Ingredients:
- EVOO spray
- 1/2 cup plus 1 1/2 cups old fashioned rolled oats
- 1 cup pecans
- 1/2 cup packed brown sugar
- 3 large egg whites (we used a carton and followed directions)
- 1/3 cup vegetable oil
- 1 Tbsp vanilla extract
- 1/4 tsp salt
- 1/4 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- 1/2 cup dried mixed fruit
- 1/2 cup raw pepitas
- 1/2 cup unsweetened coconut flakes
- 1/2 cup mini chocolate chips
Directions:
- Preheat oven to 300 degrees. Prepare a 13x9 baking pan by lining with foil, leaving edges hanging over
- In a food processor, finely grind 1/2 cup oats. Add to a small bowl.
- Add pecans into food processor. Finely chop then add to oats in the small bowl.
- In a large bowl, whisk sugar, egg whites, oil, vanilla, salt, cinnamon, and nutmeg until combined. Add oat mixture. Stir in 1 1/2 cup oats ,dried fruit, pepitas, coconut flake and chocolate chips. Stir until well combined.
- Dump into baking pan and spread evenly. Pressing down firmly.
- Bake for 40 minutes. Do not turn off oven.
- Let cool for 15 minutes. Use foil overhand to transfer to cutting board. Cut lengthwise and crosswise into 16 bars total.
- Plan in baking sheet and for additional 15 minutes.
- Let cool for 1 hour.
- Serve
