Healthy Carrot Cake Baked Oatmeal
Ingredients:
- 2 cups gluten free oats
 - 1 cup almond or coconut milk
 - 1 cup pineapple
 - 1/4 pure maple syrup
 - 1 tsp baking powder
 - 1 tsp cinnamon
 - 1/4 tsp nutmeg
 - 1/4 tsp ground ginger
 - 1 tsp vanilla extract
 - 1/4 tsp salt
 - 1/2 cup chopped pecans (optional)
 - 10 small carrots
 - 1 scoop vanilla protein powder
 
Directions:
- Preheat oven to 350 degrees. Prepare 8x8 baking dish by lightly spraying with EVOO
 - Add all ingredients into a high power blender. Blend on high for 60 seconds, stopping halfway to scrap sides.
 - Pour mixture into baking dish
 - Bake for 30 minutes or until tooth pick inserted comes out clean.
 - Let cool a few minutes.
 - Serve
 - Enjoy!!!!
