Chicken Taco Salad
Ingredients:
For Chicken:
- 1 lb ground chicken
- 1 Tbsp EVOO
- 1 small onion, diced
- 1 Tbsp garlic, minced
- 2 Tbsp taco seasoning
For Salad:
- romance lettuce, thinly chopped
- cherry tomatoes, quartered
- cheddar cheese
- corn, cut off the cob
- avocado, diced
- black beans, drained and rinsed
- dressing of your choice
Directions:
- In a medium skillet heat EVOO over medium heat.
- Add onion and saute until they are soft about 5 minutes.
- Add the garlic and saute about 30 seconds.
- Add ground chicken. Cook until fully cooked, breaking up as it cooks.
- Add in taco seasoning and 1/4 cup of water. Reduce heat to low and simmer for about 5 minutes.
- In a large serving bowl add all salad ingredients minus the dressing. Add cooked ground chicken.
- Toss until mixed evenly.
- Serve and top with dressing.
