 Maple Roasted Acorn Squash

Ingredients:

  • acorn squash
  • EVOO
  • pure maple syrup
  • salt/pepper

Directions:

  1. Preheat oven to 450 degrees. Prepare baking sheet by lightly spraying with EVOO.
  2. Cut top and bottom off acorn squash. Then slice in half. Scape out seeds with a spoon. Cut into 1/2 inch slices and arrange on baking sheet. 
  3. Lightly spray with EVOO and season with salt and pepper. 
  4. Bake for 15-18 minutes
  5. Remove from oven. Brush maple syrup over acorn squash. Flip and repeat. Return to oven and bake for an additional 5 minutes. 
  6. Serve
  7. Enjoy!!!!
