 Pork Tenderloin with Potatoes and Carrots

Ingredients:
  • 1 to 1 1/2 lb pork tenderloin
  • 1 small onion, diced
  •  baby carrots (however much your family will eat)
  • potatoes, diced (however much your family will eat)
  • EVOO
  • salt/pepper
  • garlic powder

Directions:
  1. Preheat oven to 425 degrees. 
  2. Lightly spray baking dish with EVOO.
  3. If desired marinate pork however you desire. We usually buy pre-marinated pork.
  4. Cut and peel carrots, onion, and potatoes. Place in bowl and season with EVOO, salt/pepper and garlic powder. Stir until all veggies are evenly coated
  5. Place tenderloin in middle of baking dish, add veggies around it.
  6. Bake for 30 - 35 minutes, until pork is 150-160 degrees and potatoes are tender. 
  7. Remove from oven. Allow to rest for 5 minutes before cutting. 
  8. Serve.
