Pork Tenderloin with Potatoes and Carrots
Ingredients:
- 1 to 1 1/2 lb pork tenderloin
- 1 small onion, diced
- baby carrots (however much your family will eat)
- potatoes, diced (however much your family will eat)
- EVOO
- salt/pepper
- garlic powder
Directions:
- Preheat oven to 425 degrees.
- Lightly spray baking dish with EVOO.
- If desired marinate pork however you desire. We usually buy pre-marinated pork.
- Cut and peel carrots, onion, and potatoes. Place in bowl and season with EVOO, salt/pepper and garlic powder. Stir until all veggies are evenly coated
- Place tenderloin in middle of baking dish, add veggies around it.
- Bake for 30 - 35 minutes, until pork is 150-160 degrees and potatoes are tender.
- Remove from oven. Allow to rest for 5 minutes before cutting.
- Serve.
