Protein Double Chocolate Mini Muffins
Ingredients:
- 2 cups flour
- 1 cup sugar
- 1/2 cup chocolate protein powder (I used Shakeology)
- 1 tsp baking soda
- 1/2 tsp salt
- 2 eggs
- 3/4 cup plain Greek Yogurt
- 1/2 cup whole milk
- 1/2 cup vegetable oil
- 1 and 2/3 tsp vanilla extract
- 12 oz mini chocolate clips
Directions
- Preheat oven to 350 degrees. Prepare mini muffin tin with EVOO or mini muffin liners
- In the Kitchaid add all ingredients and mix mixer. Avoid overmixing
- Spoon into muffin tin, fill to the top.
- Bake for 12-15 minutes.
- Cool for a few minutes in the pan before removing and starting next batch.
- Serve
