 Protein Double Chocolate Mini Muffins

Ingredients:

  • 2 cups flour
  • 1 cup sugar
  • 1/2 cup chocolate protein powder (I used Shakeology)
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 eggs
  • 3/4 cup plain Greek Yogurt
  • 1/2 cup whole milk
  • 1/2 cup vegetable oil
  • 1 and 2/3 tsp vanilla extract
  • 12 oz mini chocolate clips

Directions

  1. Preheat oven to 350 degrees. Prepare mini muffin tin with EVOO or mini muffin liners
  2. In the Kitchaid add all ingredients and mix mixer. Avoid overmixing
  3. Spoon into muffin tin, fill to the top. 
  4. Bake for 12-15 minutes.
  5. Cool for a few minutes in the pan before removing and starting next batch.
  6. Serve
  7. Enjoy!!!!
