Ingredients:
- 2 boneless skinless chicken breasts
- 1 cup diced peppers, I used red, green, yellow and orange
- 1/4 onion, diced
- 1 can black beans, drained and rinsed
- 1 can of corn, drained
- 1 can of diced tomatoes (not drained)
- 2 cups chicken broth
- 1 Tbsp garlic, minced
- 1/2 Tbsp chili powder
- 1 tsp oregano
- 1 tsp cumin
- salt/pepper
Directions:
- Line crockpot with slow cooker liner ( you will thank me later)
- Add all ingredients into crock pot
- Cook on low of 6 to 8 or high for 4 to 5 hours
- Remove chicken and shred with two forks
- Stir and cook additional 15 minutes
- Serve
