Shrimp Power Bowl
Ingredients:
- 1 cup quinoa, cooked per directions on package
- 1 can black beans, drained and rinsed
- 1 can chickpeas, drained and rinsed
- avocado, diced
- tomato, diced
- shrimp
- EVOO
- salt/pepper/ garlic powder
Directions:
- Cook quinoa per directions on package.
- In a skillet, cook shrimp until pink. Season with salt, pepper, and garlic powder
- In a pan heat black beans and chickpeas.
- Add all items to bowl.
- Serve
