Sausage and Potato Soup
Ingredients:
- 1 lb ground sausage, Italian
- 1 onion, diced
- 2 celery stalks, diced
- 10 baby carrots, diced
- 2 Tbsp minced garlic
- 3 Tbsp flour
- 1 tsp soy sauce
- 1 tsp Frank's hot sauce
- 5 cups chicken broth
- 1 cup heavy cream
- 6 red potatoes diced
- 1 tsp dried basil
- 1 tsp dried oregano
- salt/pepper
Directions:
- In a large stock pot, brown the sausage breaking into small pieces as it cooks.
- Add onion, celery, carrots and garlic to pot. Saute for 5 minutes.
- Add flour and cook for one minute.
- Add soy sauce and hot sauce while stirring.
- Slowly add in chicken brother while scrapping bottom of pot.
- Add heavy cream and seasonings.
- Bring to a boil. Add in diced potatoes. Simmer until potatoes are soft, about 20 minutes.
- Serve
