 Creamy Chicken Pot Pie Soup with Noodles


Ingredients:

  • EVOO
  • 1 lb chicken, boneless skinless, diced
  • 1/2 onion, diced
  • 1 Tbsp garlic, minced
  • 10 oz frozen mixed veggies
  • 1 cup heavy whipping cream
  • 3 cups chicken broth
  • 1 can cream of chicken soup
  • egg noodles
  • 1 Tbsp Italian seasoning
  • salt/pepper

Directions:

  1. In a pot cook noodles per directions on packaging.
  2. In a large stock pot, drizzle EVOO. 
  3. Add chicken. Cook until no longer pick. Season with salt and pepper
  4. Add onion, cook until translucent about 2-3 minutes.
  5. Add minced garlic cook 30 seconds.
  6. Add in mixed veggies, heavy cream, chicken broth, and cream of chicken soup. Add seasoning.
  7. Bring to a boil, then simmer for 20-30 minutes. 
  8. Add cooked egg noodles.
  9. Serve
  10. Enjoy!!!
