Hey loves. I am officially a working mom out of the house 3 days a week. With working out of the house that means a change of schedules, and I would be home all day to prep dinner randomly, or cooking whatever I want for lunch whenever. I will have to prep a little more in advance and have a plan for lunch. (I haven't worked outside of the house in 10 years). This week I am keeping the meal plan pretty basic with quick meals and also planning lunches too.
Lunch:
Fancy Salads
- mixed greens
- black beans
- diced carrots
- diced celery
- diced cucumber
- edamame
- chicken
This Weeks Dinner:
Monday: Big Mac in a bowl
Tuesday: Chicken Tacos
Wednesday: Salmon Sheet pan
Thursday: Leftovers
Friday: Local Fish Fry or Sourdough Veggie Pizza
Saturday: Grilling Out
I love the sound of your lunches. I am waiting for the weather to get a bit warmer to move onto the salads. Fab meal plan.
ReplyDeleteGood luck with the transition! I did a lot of slow cooker meals when I worked full time. It was so nice to walk in the house and smell dinner nearly done. If they required any kind of serious prep I'd try to get it ready the night before to save time in the mornings. It will be an adjustment for everyone so give yourself some grace.
