Cilantro Lime Chicken with Avocodo Salsa

When I find an awesome deal on avocado's I can't pass it up. I also can't see spending $2 on one avocado either. Last week I found a bag of 5 for $5. Normally I don't buy the bag, but couldn't pass up the deal. That means I had a lot of avocado to eat before they went bad. I started looked for ideas on Pinterest. I am known for seeing an idea then tweaking a recipe to make it my own, to my liking. It turned out be a major win in our house. Austin ate some of the chicken, which he doesn't normally eat meat. Aubriella asked for seconds. 


Cilantro Lime Chicken with Avocado Salsa



Ingredients:
Chicken Marinade:
  • 1 pounds boneless, skinless chicken breasts 
  • Juice of 3 limes, or lime juice
  • 1 cup cilantro, roughly chopped
  • ½ cup olive oil
  • 1 Tbsp. honey
  • 1 tsp. kosher salt
  • pepper
  • 2 garlic cloves, finely minced
  • ½ tsp. onion powder
Avocado Salsa:
  • 2 avocados, diced
  • 2 roma tomatoes, diced
  • ¼ red onion, finely diced
  • ¼ cup cilantro, finely chopped
  • Juice from ½ lime or lime juice
  •  pepper & salt to taste
Instructions
  1. Combine the marinade ingredients in a food processor and blend. Pour into a large resealable bag and add chicken and marinate for at least 30 minutes, up to overnight.
  2. Mix together Avocado Salsa ingredients in a medium sized bowl. Set aside.
  3. Cooke chicken over medium-high heat (grill or stovetop) until no longer pink inside. 
  4. Serve chicken with avocado salsa on top.
  5. Enjoy!
