Stuffed Acorn Squash
Ingredients:
- 2 acorn squash, cut in half
- EVOO
- salt and pepper
- 1 pound ground beef or turkey
- 1/2 onion chopped
- 1 Tbsp minced garlic
- 1 8 oz can of tomato sauce
- 1 8 oz can seasoned diced tomatoes
- 1.2 cup Parmesan cheese
Directions:
- Preheat oven to 425 degrees
- Drizzle EVOO over cut side on acorn squash. Add a little salt and pepper. Place cut side down on baking sheet. Bake for 45 minutes
- Towards the end of the squash baking, in a large skillet over medium high heat brown ground beef.
- Add in chopped onion. Saute for about 5 minutes.
- Stir in minced garlic, tomato sauce, and diced tomatoes. Bring to a bubble then reduce heat.
- Reduce oven to 350 degrees
- Remove squash from oven. Carefully flip squash over.
- Divide the meat mixture into the four halves.
- Sprinkle Parmesan over each half.
- Bake for another 25 minutes.
- Serve.

Extra notes:
- you could do part ground beef part sausage mixture
- if using less acorn squash, make meatballs with the rest of meat.
