It's May

Happy first day of May. Crazy mother nature is celebrating with today's high being 80, but it won't last tomorrow is 71 and 61 on Friday. I will take what I can get. I am so ready to be outside everyday and walking Ella home from school again. Now we just need to get rid of all this rain too. 





Recipe Round-Up 
This past month I had all these aspirations to try so many new recipes but it never happened. April was a rough pregnancy month, and just a dreary month with no motivation. Hopefully this month will go better. Plus with my new health diagnosis we will be eating healthier again and less processed so I have to do more cooking. I am so bummed with everything that has sugar in it. Do you have any recommendations for low sugar meals?

In April I did share:

Instant Pot Hard Boiled Eggs that are quick easy and great for Easter, Mother's Day, well any holiday and anything you need hard boiled eggs for like egg salad.


Sweet Sloppy Joes so delicious and healthier compared to what you get out of a can. 


Look Back at April
April did not go as planned. As I said before I had no motivation and it was a rough month pregnancy wise. Lets take a look and see what I did and didn't do on my to do list. (4/10) 


  • Spring Clean
  • Read 3 books
  • Continue doing daily stretching/yoga
  • Color Easter Eggs
  • Have Easter Egg hunt for kids
  • Go on one family walk
  • Start going through baby clothes
  • Take Austin to the zoo
  • Organize junk drawer
  • Organize kids cups

Goals for May

  • Start planning/packing hospital bag (yes I know I am only 27 weeks but it is going to fly)
  • Plan Austin's birthday 
  • Start Garden
  • Read 3 books
  • Figure out bedroom arrangements 
  • Go through baby clothes and start washing them
  • Take Austin to the Zoo
  • Plan a surprise for Ella
  • Date night with Brian
