Taco Casserole
Ingredients:
- 16 ounces Frozen Cauliflower Rice
- 2 Tbsp EVOO
- 1 lb Ground Turkey
- 1 Small Bell Pepper - seeded, chopped
- 1 Small White Onion - chopped
- 4 Tablespoons Taco Seasoning
- 1/2 Cup Water
- 3 Cups Shredded Colby/Jack Cheese
- 1 Cup plain Greek yogurt
- 1 can drained black beans (optional)
Optional Toppings:
- Chopped Lettuce
- Chopped Tomato
- Avocado
- Back Olives
Instructions
- Preheat oven to 350ºF
- Pan fry the cauliflower rice in oil over medium/high heat until browned. Transfer to casserole dish and spread in an even layer.
- Brown ground turkey with bell pepper and onion over medium/high heat. Drain excess fat if necessary then add taco seasoning, and water. Stir and cook until liquid absorbs. Add black beans if desired. cook another 3-5 minutes. Transfer to casserole dish in an even layer on top of cauliflower rice.
- Top with shredded cheese and bake for 10-15 minutes.
- Spread Greek Yogurt over the top. Sprinkle with extra shredded cheese,and optional toppings.
- Serve
- Enjoy

I love the idea of using cauliflower rice. I don't eat regular rice anymore and I usually just put my taco meat on a salad!
