Healthy Turkey Pot Pie

This isn't like my normal recipes. I didn't measure anything. I quickly threw everything in a pan. It turned out great. Even my kids ate it.

Ingredients:
  • coconut oil
  • any veggies you have on hand. I used carrots, onion, cauliflower, peas, corn, and mushrooms.
  • salt
  • pepper
  • garlic powder
  • parsley
  • flour
  • almond milk
  • 1 pie crust
Directions:
  1. Preheat oven to 425
  2. Spray pie dish with EVOO
  3. In a large skillet, add coconut oil. Once hot add veggies. Cook until veggies are softened. 
  4. Sprinkle veggies with flour. Slowly add in almond milk, stirring constantly. Bring to a boil and let thicken.
  5. Add in seasoning and turkey.
  6. Pour mixture into pie dish. 
  7. Cover top with pie crust. Gently press dough into dish, cut off any excess. Cut slits in top.
  8. Bake 25 minutes.
  9. Let rest a few minutes.
  10. Serve.
  11. Enjoy!!!
