 Air Fryer Garlic Cream Scallops


Ingredients:

  • 1 pound scallops
  • 1 Tbsp EVOO
  • salt/pepper
  • 1 Tbsp EVOO
  • 1/4 cup pesto
  • 3 Tbsp almond milk
  • 2 Tbsp minced garlic

Directions:

  1. In a small bowl, mix scallops with EVOO, and lightly season with salt and pepper. Place in air fryer basket. Air Fry at 350 degrees for 5 minutes, flipping half way. 
  2. In a small sauce pan, heat EVOO, pesto, garlic, and almond milk. Simmer for a few minutes.
  3. Pour scallops into a small mixing bowl. Combine with garlic sauce. 
  4. Serve over your favorite pasta, I used zoodles.
  5. Enjoy!!!
