 Instant Pot Shrimp Stir Fry

Ingredients:

  • 1 tbsp EVOO
  • 1 lb raw shrimp, thawed
  • a bunch of raw veggies of your choice, I used a gallon size bag of mixed veggies
  • 1/4 cup soy sauce
  • 2 Tbsp minced garlic
  • 1-3 Tbsp corn starch

Directions:

  1. Coat bottom of instant pot with EVOO
  2. Add shrimp, veggies, soy sauce, and garlic in Instant Pot. Make sure the vent is sealed position. 
  3. Cook on manual for 1 minute. Do a quick release and open the lid. 
  4. To thicken sauce, turn to saute and mix in cornstarch until at desired consistency. 
  5. Serve with rice
  6. Enjoy
