Skillet Lasagna


  • 1lb ground beef
  • 1lb lasagna noodles, broken into pieces or whatever pasta you have on hand

  • 1 medium onion, diced
  • 1 jar pasta sauce of choice
  • 16 oz skin ricotta cheese
  • 1 cup shredded mozzarella
  • 1/4 cup shredded parmesan cheese
  • 1 Tbsp EVOO


  1. Bring water to boil in a large pot. Cook pasta per directions on package.
  2. In a large skillet on medium heat. Heat the oil and brown ground beef, breaking it up as you go. Add onion and cook until translucent 
  3. Drain grease from meat mixture.
  4. Stir sauce into meat mixture. Summer for 8 to 10 minutes.
  5. Once noodles are done, drain them and add to skillet, folding into sauce and meat mixture. Stir in mozzarella and parmesan until combined and melted.
  6. Turn off heat. Add in ricotta. Cover and let sit for 5 minutes. 
  7. Stir.
  8. Serve
