Creamy Chicken Soup
Ingredients:
- 1 Tbsp EVOO
- 2 Tbsp garlic, minced
- 1 onion, diced
- 2 large carrots, diced
- 2 celery stalks, diced
- 2 medium red skin potatoes, diced
- 1/4 cup flour
- 1/2 tsp oregano
- salt/pepper
- 32 oz chicken stock ( you could do half stock half water)
- 1 cup heavy cream
- 4 cups macaroni, cooked (you could also use noodles)
Directions
- In a large pot over medium high heat, drizzle EVOO.
- Add garlic and saute for 1 minute.
- Add onion and saute for another minute.
- Add carrots and celery, saute for 5 minutes until veggies are softened.
- Add potatoes and cook for 3 minutes.
- Add flour, oregano, salt, pepper.
- Add chicken stock. Turn heat up to high and bring soup to a boil. Boil for 3-5 minutes.
- Turn heat down to low, cover and simmer for 20-25 minutes until potatoes are softened.
- Add chicken, and heavy cream. Cook for 10-15 minutes until sauce thickens.
- Stir in cooked macaroni.
- Taste test, add more seasoning if needed.
- Serve
