 Creamy Shrimp Scampi Spaghetti Squash


  • 1 medium spaghetti squash
  • 1 lb large shrimp, peeled and deveined
  • salt/pepper
  • 2 Tbsp unsalted butter
  • 3 Tbsp minced garlic
  • 1 large handful spinach
  • 1 lemon
  • 1/2 cup heavy cream
  • 1/2 cup shredded parmesan cheese


  1. Cook spaghetti squash. You can bake it (directions here) or use the instant pot which is my preferred method (directions here)
  2. Let squash rest until cool to handle.
  3. In a large skillet, melt butter over meidum heat. 
  4. Add shrimp. Season with salt and pepper. Cook until pink.
  5. Add garlic. Cook for 1 minute.
  6. Add spinach and stir until softened.
  7. Slowly add heavy cream. Followed by parmesan cheese. Stirring frequently until thickened.
  8. Squeeze lemon juice into sauce and stir.
  9. Use a fork to scrape squash into long strands.
  10. Serve shrimp sauce over squash.
