Sausage Stuffed Acorn Squash
Ingredients:
- 1 acorn squash cut in half
- 2 Tbsp EVOO
- salt / pepper
- 1 lb ground Italian sausage
- 1/2 container sliced mushrooms
- 1 onion, diced
- 1 medium apple, diced
- salt/pepper
- 1 Tbsp minced garlic
- 1/4 cup shredded parmesan
Directions:
- Preheat oven to 400 degrees. Prepare a baking dish by spraying lightly with EVOO
- Slice acorn squash length wise, remove seeds. Place cut side up in baking dish. Brush each side with EVOO, top with salt and pepper.
- Bake for 40 minutes.
- While the squash baking, in a large skillet brown sausage.
- Add mushrooms, onion, apple, garlic, and salt/pepper to skillet. Cook until softened.
- Scoop sausage mixture into center of squash. Top with parmesan
- Place until broiler until cheese is melted.
- Serve
- Enjoy!!!!
* there is a lot more stuffing that won't fit in the squash. My kids don't each the squash but will eating the stuffing. Also works great for leftovers, on a sandwich, etc.
