 Hearty Italian Chicken Soup


  • 1 lb ground chicken
  • 1 onion, diced
  • 1 Tbsp minced garlic
  • 1 can diced tomatoes
  • 1 can white cannellini beans
  • 1 box chicken broth
  • 3 carrots, diced
  • 2 celery stalks, diced
  • 3 tsp Italian seasoning
  • 1 bay leaf
  • 2 cups spinach, roughly chopped
  • salt/pepper
  • red pepper flake (optional)
  • Parmesan cheese (optional)

  1. In a large pot, spray a little EVOO on bottom. Over medium high heat, cook ground chicken, breaking it up as you go.
  2. Add onion, garlic, tomatoes, beans, chicken brother, carrots, celery, Italian seasoning, and a bay leaf.
  3. Bring to a simmer. Cook for 10 minutes or until carrots are soft. 
  4. Add spinach.
  5. Season with salt/pepper and red pepper flake.
  6. Serve.
  7. Top with Parmesan cheese.
  8. Enjoy!!!
