 Pumpkin Zucchini Bread

Ingredients:

  • 3 cups flour
  • 2 tsp cinnamon
  • 1 tsp pumpkin spice 
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 cup brown sugar
  • 3 eggs
  • 1 cup pumpkin puree
  • 1/2 butter softened
  • 1 Tbsp vanilla extract
  • 1 medium zucchini shredded
  • 1 cup chocolate chips


Directions:

  1. Preheat oven to 350 degrees. Prepare loaf pan by spraying lightly with EVOO.
  2. In a kitchen aid mixer, mix flour, cinnamon, pumpkin spice, salt, baking soda, baking powder, and brown sugar.
  3. Slowly add in eggs, pumpkin puree, butter, vanilla, and zucchini.
  4. Gently fold in chocolate chips
  5. Pour into loaf pan. Bake for 60 minutes or when toothpick is clean when inserted in center of pan.
  6. Cool.
  7. Serve
  8. Enjoy!!
