Fresh Tomato Sauce
Ingredients:
- 7-10 large tomatoes
- 1/2 lemon, juice only
- 1 tsp salt
- 1 Tbsp garlic, minced
- basil, oregano optional
Directions:
- Bring a large pot of water to a boil.
- Prepare a large bowl with ice water and set next to the stove.
- Prepare tomatoes but removing stems and cutting an X on bottom of tomato.
- In batches, Blanch the tomatoes by placing in boiling water for 45 to 60 seconds until skin starts to wrinkle. Using a slotted spoon remove tomatoes from boiling water and place in ice water.
- Using your hands peel the tomatoes. Cut tomatoes into 1/4 and place in food processor.
- Blend tomatoes until desired consistency of sauce.
- Dump tomatoes from food processor into Dutch oven or large pot.
- Repeat with remaining tomatoes.
- Simmer tomatoes in Dutch oven or large pot for 30 to 90 minutes. depending on your preferred consistency.
- Stir in lemon juice, salt, garlic, and optional additional seasonings.
- Used as desired, I am freezing.
