 Black Bean Quinoa Salad


  • 1/2 cup prepared quinoa
  • 1 can of black beans
  • 1 medium cucumber, diced
  • 10 grape tomatoes, diced
  • 3 corn on the cobs, corn cut off
  • 2 Tbsp EVOO
  • salt/pepper
  • 2 Tbsp red wine vinegar
  1. Combine all ingredients for the salad in a bowl. 
  2. In a small bowl combine EVOO, salt./pepper, and red wine vinegar.
  3. Pour dressing over salad. Stir well.
  4. Refridgerate for at least 2 hours.
  5. Serve
  6. Enjoy!!!
