Kielbasa Rice Stuffed Acorn Squash
Ingredients:
- 2 acorn squash
- brown rice
- kielbasa
- onion, diced
- 1/2 cup chicken broth
Directions:
Prepare Squash
- Preheat oven to 400 degrees. Prep baking sheet with foil.
- Slice squash in half length wise, I also like to cut off the top. Scoop out seeds and pulp and discard.
- Drizzle with EVOO and salt. Lay squash cut side down on baking sheet.
- Bake for 45 to 60 minutes until tender.
Rice
- Prepare rice according to directions on package. Set aside
Kielbasa
- Heat EVOO in large skillet over medium heat.
- Add diced onion and cook 1 to 2 minutes.
- Cut Kielbasa into bite sized pieces and add to skillet.
- Cook until heated thoroughly.
- Add rice to Kielbasa mixtures. Add 1/2 cup chicken broth and cook down.
- Serve mixture inside of acorn squash.
- Enjoy.
