 Kielbasa Rice Stuffed Acorn Squash

Ingredients:

  • 2 acorn squash
  • brown rice
  • kielbasa
  • onion, diced
  • 1/2 cup chicken broth

Directions:

Prepare Squash

  1. Preheat oven to 400 degrees. Prep baking sheet with foil.
  2. Slice squash in half length wise, I also like to cut off the top. Scoop out seeds and pulp and discard.
  3. Drizzle with EVOO and salt. Lay squash cut side down on baking sheet.
  4. Bake for 45 to 60 minutes until tender.
Rice
  1. Prepare rice according to directions on package. Set aside
Kielbasa
  1. Heat EVOO in large skillet over medium heat.
  2. Add diced onion and cook 1 to 2 minutes.
  3. Cut Kielbasa into bite sized pieces and add to skillet. 
  4. Cook until heated thoroughly. 
  5. Add rice to Kielbasa mixtures. Add 1/2 cup chicken broth and cook down.
  6. Serve mixture inside of acorn squash.
  7. Enjoy.
