 Loaded Broccoli Potato Soup


  • 20 oz shredded hash browns
  • 1 Tbsp minced garlic
  • 2 cups reduced fat sour cream
  • 1/4 cup flour
  • 1/2 tsp pepper
  • 1/8 tsp nutmeg
  • 4 cups chicken or vegetable stock
  • 12 oz bag frozen broccoli bites, thawed
  •  3 cups cheddar cheese, shredded


  1. In a large slow cooker add hash browns and garlic. 
  2. In a large bowl mix together sour cream, flour, pepper, and nutmeg. 
  3. Stir stock into flour mixture.
  4. Dump flour mixture over hash browns.
  5. Cook covered on low for 6 to 8 hours.
  6. Add broccoli. Stir in cheddar cheese. Cook for an addition 10-15 minutes until all cheese is melted.
  7. Serve
