Tuscan Shrimp
Ingredients:
- 1 lb shirmp, thawed and peeled
- 2 Tbsp butter
- 1 Tbsp flour
- 2 Tbsp minced garlic
- 1 cup heavy cream
- 1 tsp lemon juice
- 1/2 tsp Italian seasoning
- 1/4 cup sun dried tomatoes
- 2 handfuls of fresh spinach
Directions:
- In a large skillet over medium heat, melt butter.
- Whisk in flour until smooth
- Add garlic and cook for 1 minute.
- Add in heavy cream, lemon juice, seasoning, and tomatoes. Bring to a simmer for 2 minutes.
- Add shrimp and cook until shrimp is thoroughly cooked.
- Add spinach cook for 2 minutes.
- Serve as desired. (we had over mash potatoes and added steamed broccoli)
