Tomato Basil Tortellini Soup
Ingredients:
- 10 baby carrots, diced
- 1 onion, diced
- 2 Tbsp minced garlic
- 3 cans crushed or roma tomatoes (28 oz each)
- 1 carton vegetable broth (32 oz)
- 2 Tbsp basil
- 1 Tbsp sugar
- salt/pepper
- 16oz cheese tortellini
- 3/4 cup heavy cream
Directions:
- Add carrots, onion, garlic, tomatoes, broth and seasoning to crock pot.
- Cook on low for 6 to 8 hours.
- Puree with a immersion blender or a high powered blender. careful it is hot.
- Stir in tortellini. Cook on high for 20 minutes
- Reduce heat to warm, stir in heavy cream.
- Serve
- Enjoy!!!!!
**Notes**
- do NOT use a crock pot liner if using an immersion blender
