White Lasagna Soup
Ingredients:
- 2 chicken breast, boneless skinless, bite size
- 1 onion, diced
- 1 Tbsp garlic, minced
- 2 tsp Italian seasoning
- salt/pepper
- 4 cups chicken broth
- 1/4 cup sun dried tomatoes (optional)
- 1/2 cup carrots (optional)
- 2 cups pasta, I used chickpea pasta
- 1 cup heavy cream
- 3 Tbsp corn starch
- 1 cup fresh spinach
- 1/2 cup parmesan, grated
Directions
- In a large crockpot add chicken breast, onion, Italian seasoning, salt, pepper, chicken broth, sun dried tomatoes and carrots. Cook on low for 6 to 8 hours.
- In a bowl, mix together heavy cream and corn starch.
- Add mixture, pasta, and spinach to crockpot.
- Stir to make sure all pasta is covered.
- Cook until pasta is softened, about 20 minutes.
- Before serving stir in cheese.
- Serve
