Vegetable Beef Soup
Ingredients:
- 1 lb ground beef (can also use ground chicken or turkey)
- 1 medium onion, diced
- 1 Tbsp garlic, minced
- 1 box vegetable broth (can also use beef or chicken)
- 15 oz can diced tomatoes
- 12 oz bag frozen mixed veggies,
- 8 oz can tomato sauce
- 1 tsp parsley
- 1 tsp basley
- 1 tsp oregano
- salt/pepper
Directions:
- In a large dutch oven or stock pot, brown meat. Drain fat if needed.
- Add in onion and garlic, cook until onion is translucent.
- Stir in veggies.
- Stir in broth.
- Add seasoning.
- Bring to a boil. Reduce heat and simmer for 45 minutes.
- Serve
