Zuppa Toscana Soup
Ingredients:
- 5 strip bacon, cut into bite sized pieces
- 1 lb Italian sausage
- 1 medium onion, diced
- 1 Tbsp garlic, minced
- 4 cups chicken broth
- 2 cups water
- 4 large red skin potatoes, diced
- 1/2 Tbsp Italian seasoning
- 1 cup heavy whipping cream
- big handful of spinach (you could also use kale)
- salt/pepper to taste
Directions:
- In a large stock pot on medium heat, add bacon and sausage. Cook until sausage is no longer pink.
- Stir in onions and garlic, cook until onions translucent.
- Add chicken broth, water, potatoes, and seasoning. Bring to a boil, then reduce heat to simmer for about 15 minutes, until potatoes are tender.
- Stir in cream and spinach.
- Serve
