Lentil Vegetable Soup
Ingredients:
- 1 cup dried green lentils
- 2 Tbsp EVOO
- 1/2 onion, diced
- 2 Tbsp garlic, minced
- 2 stalk celery, diced
- 3 carrots, diced
- a handful of mushrooms, diced
- 1 head broccoli, diced
- 15 oz can diced tomatoes
- 3 medium red potatoes, diced
- 4 cups veggie broth
- 1 tsp basil
- 1 Tbsp Italian seasoning
- salt/pepper
Directions:
- Rinse lentils. Then soak for a minimum of 30 minutes or as long as overnight. Rinse again.
- In a large stock pot, drizzle EVOO.
- Saute onion and garlic until translucent.
- Add remaining ingredients. Bring to a boil.
- Lower heat and simmer for 30 minutes to an hour.
- Serve
- Enjoy!!!
Side Notes:
- has so much more flavor on the second day.
- I used whatever vegetables I had on hand that needed used up. You can opt out or add in other veggies to your families liking.
