Easy Vegetable Soup
Ingredients:
- 1 Tbsp EVOO
- 1 onioned, diced
- 1 Tbsp garlic, minced
- 32 oz of vegetable broth
- 2 red skin potatoes, diced
- 15 oz can diced tomatoes
- 4 cups mixed frozen veggies
- 1 Tbsp Italian seasoning
- salt/pepper
Directions:
- In a large stock pot, drizzle EVOO. Saute onion for 1-2 minutes until translucent.
- Add garlic and cook for 30 seconds.
- Add broth, tomatoes, potatoes and seasoning. Bring to a boil.
- Reduce heat and add vegetables.
- Simmer for 30 minutes, until potatoes are tender.
- Serve
- Enjoy
*** You can also add any there vegetables that you have on hand. I added broccoli, carrots, celery and mushrooms that needed used up.
