 Easy Vegetable Soup

Ingredients:

  • 1 Tbsp EVOO
  • 1 onioned, diced
  • 1 Tbsp garlic, minced
  • 32 oz of vegetable broth
  • 2 red skin potatoes, diced
  • 15 oz can diced tomatoes
  • 4 cups mixed frozen veggies
  • 1 Tbsp Italian seasoning
  • salt/pepper

Directions:

  1. In a large stock pot, drizzle EVOO. Saute onion for 1-2 minutes until translucent.
  2. Add garlic and cook for 30 seconds.
  3. Add broth, tomatoes, potatoes and seasoning. Bring to a boil. 
  4. Reduce heat and add vegetables.
  5. Simmer for 30 minutes, until potatoes are tender.
  6. Serve
  7. Enjoy
*** You can also add any there vegetables that you have on hand. I added broccoli, carrots, celery and mushrooms that needed used up.
