 Stuffed Pepper Soup


Ingredients:

  • 1 Tbsp EVOO
  • 1 medium onion, diced
  • 3 peppers, diced (I did red, yellow, and green)
  • 2 Tbsp minced garlic
  • 1 lb ground sausage
  • 1 Tbsp paprika
  • 1 tsp basil
  • 1 tsp oregano
  • salt/pepper
  • 2 14 oz cans diced tomatoes
  • 32 oz beef broth
  • 1 cup rice, cooked
  • red pepper flake, optional

Directions:

  1. Heat a large stock pot to medium heat. Drizzle bottom with EVOO. 
  2. Add onions and peppers and cook until onion is translucent. 
  3. Add garlic and cook another minute.
  4. Add is ground sausage, cook until no longer pink and crumb while cooking.
  5. Stir in seasoning.
  6. Add diced tomatoes, beef broth, and cooked rice. Stir together. 
  7. Bring to a boil than reduce heat to simmer. Simmer for at least an hour.
  8. Serve
