Stuffed Pepper Soup
Ingredients:
- 1 Tbsp EVOO
- 1 medium onion, diced
- 3 peppers, diced (I did red, yellow, and green)
- 2 Tbsp minced garlic
- 1 lb ground sausage
- 1 Tbsp paprika
- 1 tsp basil
- 1 tsp oregano
- salt/pepper
- 2 14 oz cans diced tomatoes
- 32 oz beef broth
- 1 cup rice, cooked
- red pepper flake, optional
Directions:
- Heat a large stock pot to medium heat. Drizzle bottom with EVOO.
- Add onions and peppers and cook until onion is translucent.
- Add garlic and cook another minute.
- Add is ground sausage, cook until no longer pink and crumb while cooking.
- Stir in seasoning.
- Add diced tomatoes, beef broth, and cooked rice. Stir together.
- Bring to a boil than reduce heat to simmer. Simmer for at least an hour.
- Serve
