White Chicken Chili

 White Chicken Chili

Ingredients:

  • 1 Tbso EVOO
  • 1 medium onion, diced
  • 1 Tbsp minced garlic
  • 8 oz diced green chilis 
  • 2 tsp cumin
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 cups low sodium chicken broth (I used homemade broth) (more if desired more liquid)
  • 1/2 cup green salsa
  • 2 cans Great Northern beans, drained and rinsed
  • 1 can corn, drained and rinsed
  • 1/4 cup plain Greek yogurt
  • 2 1/2 cups diced cooked chicken (I baked a couple of chicken breasts)
  • juice from 1 lime

Directions:

  1. In a large stock pot over medium heat, drizzle EVOO. Add onion and cook until translucent.
  2. Add garlic, cook for 30 seconds.
  3. Mix in all spices, and green chilis. 
  4. Add broth, salsa, beans, corn, and Greek yogurt. Bring to a simmer. Continue to simmer for 5 minutes.
  5. Carefully remove 2 cups (it will be HOT) and blend until smooth. Transfer back to pot.
  6. Add chicken. Add more liquid if desired. Simmer on low for 20-25 minutes.
  7. Stir in lime juice
  8. Serve
