Slow Cooker Baked Apples and Mini Apple Pie Bites

This past fall we bought two bags of apples. My family really has to be in the mood to eat an apple. Even then with the kids I have to peel, core, and skin the apple. When we bought the apples, I had all these intentions of making apple pie, apple crisp, apple cobbler, and apple cookies. That hasn't happened yet. Last week I finally made slow cooker baked apples and mini apple pie bites with the baked apples. They were a hit at our Friendsgivings, they ate them all. 



Slow Cooker Baked Apples

Ingredients:
8 apples, peeled, cored, and sliced then cut in half
1/2 cup sugar
1/4 cup Brown Sugar
1 tsp Ground Cinnamon
1/4 tsp Nutmeg
2 Tbsp Unsalted Butter, cut into small cubes

Directions:
1- Place apples in slow cooker. 
2- Stir in rest of ingredients to evenly coat apples.
3- Cover. Cook on low for 4 hours or until apples are soft. 
4- Serve alone or with ice cream.
5- Enjoy!



Mini Apple Pie Bites
Ingredients:
1 refrigerated pie crust
1 cup baked apples

Directions:
1- Preheat over to 450 degrees
2- Spray mini muffin pan with cooking spray or EVOO.
3- Cut pie crust into circles a little larger than the muffin pan. (I found the lid to a spice bottle was the perfect size to cut my pie crust. 
4- Place pie crust in each muffin pan. Add 1 Tbsp of baked apples. (add more or less to your liking of how much filling you would like)
5- Bake for 12 minutes.
6- Let cool for 5 minutes. Remove from pan.
7- Serve.
8- Enjoy!!!!
